Apple Crumb Crisp

It's starting to feel like fall around here. Just a little bit of brisk air makes me want to go all domestic goddess and bake...and what better to bake with than some tasty organic apples, right?

This year I have changed over my eating habits and completely overhauled my pantry and fridge not to mention cleaning and beauty products but that is for another post. In my home we eat all organic, non GMO, and locally sourced food whenever possible. Most recently, I have ditched all refined sugars and flours. Which brings us to my baking experiment. 

I was feeling kinda lazy so I figured a crustless pie with a crumb topping would be a quick trip to fall dessert goodness. Using sprouted flour in place of traditional all purpose flour and coconut sugar and maple syrup in place of granulated and brown sugar I set out to make a masterpiece flying by the seat of my pants. I mean come on, how many Apple crumb pies have I made in my lifetime? I got this! While this could have been a recipe for disaster, it happily ended in euphoria on a plate. 

I hope you will give this recipe a try...it's perfect for fall, it's easy peasy, AND it's wholesome. Seriously, could you ask for anything more? 

I topped mine with wee scoop of organic vanilla ice cream. Mmmmm so good! Oh, and did I mention my test subject (aka my husband) who dislikes Apple pie in general and devoured this tasty treat? Enough said! Now go get your domestic goddess on already! You can thank me later :)

Apple Crumb Crisp

{Filling}
4- 5 Large Tart Apples, Peeled & Sliced (I used organic AND local honey crisp apples)
1 Tbs Fresh Lemon Juice
1/3 Cup Coconut Sugar
1/2 Tsp Cinnamon
1/4 Tsp Nutmeg
2 Tbs Sprouted Flour
1/4 Cup Maple Syrup 

{Topping}
1/2 Cup Coconut Sugar
1/2 Cup Sprouted Flour
3/4 Cup Old Fashioned Rolled Oats (not instant)
1/2 Tsp Cinnamon
1/4 Tsp Celtic Sea Salt 
1/2 Cup Grassfed Butter, cut in 1" pieces
2 Tbs Maple Syrup

Preheat oven to 350 degrees.

Place sliced apples in a medium bowl and toss with lemon juice. In a small bowl combine the coconut sugar, cinnamon, nutmeg, and flour. Pour mixture over apples and toss. Finally, drizzle the maple syrup over the apples and toss again. Set aside.

In a medium bowl combine the sugar, flour, oats, cinnamon, and salt. Cut in the butter and with a pastry cutter (or use 2 knives) until it just starts to form crumbs. Drizzle the maple syrup over the mixture and continue cutting in the butter until coarse crumbs are forming and maple syrup is evenly distributed.

Pour the apple mixture into a buttered 8x8 baking dish and top with the crumb mixture pressing it lightly in. Bake for 40 minutes. 

Let cool for at least 20 minutes before devouring.
