Life is too short to waste my life with insecurity. It's so easy to think negatively and I do it countless times a day. Breaking myself down with every thought and for what? Seriously, I had to ask myself...and you should too. 

This brings to mind some of my Mom's wisdom "Speak life! Negativity is poison but positive thoughts and words breathe life. You are the handiwork of the Creator; You are His masterpiece." 

This week I am going to truly focus on loving myself. I challenge you to look past the things you dislike about yourself and speak words of life.

What I Wore

A couple weeks ago the hubby and I decided to take a walk through The Marsh Trail at the Meadowlands Reserve. Since there was a bit of a nip in the air I decided it was time to break in my new scarf I scored from my fave shop, Free People. This lovely accessory can double as a wrap and I foresee it being my blanket on my upcoming flight in November.

Children of the Tuna: Somebody's Watching Me

The hubby and I are on the vacation countdown...18 days to go until Disney! It certainly can't come fast enough. I am in desperate need of a recharge especially before the holiday whirlwind carries me away!

Motivational Monday

I have a big dream that I am currently building wings for. Thankfully it's a dream that I am building with a dear friend but I am not going to lie, it's still scary. Anytime you go out of your comfort zone you know it's going to be a challenge but the end result will be well worth it.

That's where faith comes in. I didn't just decide to follow this dream on a whim. I prayed about it, A LOT. Was this a new door God was opening for me? Is this His plan for my future? How can I possibly do this? After a couple weeks of seeking God and praying morning noon and night I felt such an overwhelming peace and I knew I had my answer. 

While having the peace to know this was the right direction was great, I still have to travel this path. So this quote is very fitting for me and I know I am going to learn a lot on this journey. It's not going to be easy but anything worth doing wouldn't be easy right? It's going to be scary at times and require a lot of hard work but more importantly my faith needs to be bigger than my fears.

Children of the Tuna: Box Edition

Cats or as I lovingly refer to them, Tunas, have a thing for boxes. It doesn't matter the size, large or small, it's love at first sight and often comical to watch. My little tunas are no exception! We have at least 2 to 3 boxes in our home at all times. What better way to show you than with a picture...or two or three?

Have any good plans this coming weekend? The hubby and I are taking a road trip out to Pennsylvania to visit his Aunt and Uncle. I love a long drive and even more so in the fall with all the foliage.

Apple Crumb Crisp

It's starting to feel like fall around here. Just a little bit of brisk air makes me want to go all domestic goddess and bake...and what better to bake with than some tasty organic apples, right?

This year I have changed over my eating habits and completely overhauled my pantry and fridge not to mention cleaning and beauty products but that is for another post. In my home we eat all organic, non GMO, and locally sourced food whenever possible. Most recently, I have ditched all refined sugars and flours. Which brings us to my baking experiment. 

I was feeling kinda lazy so I figured a crustless pie with a crumb topping would be a quick trip to fall dessert goodness. Using sprouted flour in place of traditional all purpose flour and coconut sugar and maple syrup in place of granulated and brown sugar I set out to make a masterpiece flying by the seat of my pants. I mean come on, how many Apple crumb pies have I made in my lifetime? I got this! While this could have been a recipe for disaster, it happily ended in euphoria on a plate. 

I hope you will give this recipe a try...it's perfect for fall, it's easy peasy, AND it's wholesome. Seriously, could you ask for anything more? 

I topped mine with wee scoop of organic vanilla ice cream. Mmmmm so good! Oh, and did I mention my test subject (aka my husband) who dislikes Apple pie in general and devoured this tasty treat? Enough said! Now go get your domestic goddess on already! You can thank me later :)

Apple Crumb Crisp

{Filling}
4- 5 Large Tart Apples, Peeled & Sliced (I used organic AND local honey crisp apples)
1 Tbs Fresh Lemon Juice
1/3 Cup Coconut Sugar
1/2 Tsp Cinnamon
1/4 Tsp Nutmeg
2 Tbs Sprouted Flour
1/4 Cup Maple Syrup 

{Topping}
1/2 Cup Coconut Sugar
1/2 Cup Sprouted Flour
3/4 Cup Old Fashioned Rolled Oats (not instant)
1/2 Tsp Cinnamon
1/4 Tsp Celtic Sea Salt 
1/2 Cup Grassfed Butter, cut in 1" pieces
2 Tbs Maple Syrup

Preheat oven to 350 degrees.

Place sliced apples in a medium bowl and toss with lemon juice. In a small bowl combine the coconut sugar, cinnamon, nutmeg, and flour. Pour mixture over apples and toss. Finally, drizzle the maple syrup over the apples and toss again. Set aside.

In a medium bowl combine the sugar, flour, oats, cinnamon, and salt. Cut in the butter and with a pastry cutter (or use 2 knives) until it just starts to form crumbs. Drizzle the maple syrup over the mixture and continue cutting in the butter until coarse crumbs are forming and maple syrup is evenly distributed.

Pour the apple mixture into a buttered 8x8 baking dish and top with the crumb mixture pressing it lightly in. Bake for 40 minutes. 

Let cool for at least 20 minutes before devouring.
